    Fairtrade Fortnight 2024 🌏 Celebrate Fairtrade Fortnight with a cup that makes a difference! ✨ Introducing our Fairtrade Organic Ethiopia Yirgacheffe Cherbenta Gr1 (YCFCU) Natural ☕ Sourced from the Yirgacheffe Coffee Farmers Cooperative Union (YCFCU), one of Africa’s largest cooperatives, this coffee is unique to its terroir 🌄 Certified by Fairtrade Labelling Organisations International (FLO) in 2003, the major aim of YCFCU has been to secure better prices for farmers. Their mission is to promote and support the continuing development of a sustainable coffee supply, by offering producers access to the international market and promoting social and environmentally sustainable practices ♻️ The Cherbenta cooperative is part of YCFCU, which unites 28 cooperatives across six districts in the Gedeo Zone, Southern Ethiopia. This coffee bursts with flavour, hosting notes of orange peel 🍊, boozy red wine, and sticky caramel. Sourced from the Oromia Coffee Farmers Cooperative Union (OCFCU), this exceptional coffee represents the dedication and resilience of over 102,000 smallholder farmers in the Oromia region of southern Ethiopia 🇪🇹 Founded in 1999, OCFCU started with just 35 small cooperatives and has grown to become one of Ethiopia’s largest coffee cooperatives. Centred in the lush, mountainous rainforests at altitudes of 1500–2300 masl 🌄OCFCU members are committed to promoting environmental sustainability and economic self-sufficiency in their communities.     Carbonic Maceration 🍒 Carbonic maceration, a processing technique borrowed from the wine industry, is making waves in the world of specialty coffee for its ability to create truly unique flavour profiles. 🌱 This method is a variation of anaerobic fermentation but with a twist—coffee cherries or depulped beans are placed in pressurised containers filled with carbon dioxide. The result? A highly controlled environment that allows producers to manage variables such as temperature, oxygen levels, and pH. Here’s how it works: The pressurised tanks can be adjusted to fine-tune the fermentation process, allowing for precise control of oxygen through the addition of carbon dioxide. This careful manipulation of conditions leads to the formation of distinct and intensified flavour notes that are not typically achievable through traditional fermentation methods. 🌾 During the carbonic maceration process, the coffee undergoes a transformation as the lower oxygen environment reduces typical yeast derived fermentation. This means the initial fermentation is not caused by yeast, but instead occurs intracellularly (from the inside out). So, what is the result for the final cup? ☕ The result is a complex coffee filled with vibrant flavours, including sweet berries, tropical fruits, and a winey acidity.
