Let me take you on a little journey of a cheesemaker, who popped up in the glitz and glamour of the Gold Coast, with an ambition to create cheese that showcased the beauty of the GC hinterland and beyond. This tale is about Paul, top cheesemaker at Gold Coast Cheese Co. But first, like all great cheese, we need to start well before that. We find ourselves in the Scenic Rim, high up in the hills behind Brisbane and the Gold Coast where we run into a very unassuming dairy farmer who's passion is for the welfare of his cows and the quality of the milk he produces. We're going to call him Liam, because that's his name. Yes, this is him holding the fence up. A gentle giant, looking over views well beyond the horizon. Liam collects his supreme dairy nectar and drives his truck down the winding road to the glitzy Gold Coast. A place where both Paul and Liam feel out of place but when he arrives at the Coastal Creamery Palace, they both give that reassuring nod that this is nectar from the gods and Paul will perform wizardry to honour such a worthy offering. And here's Paul, already hard at it. Like a new mother, he watches over ever churn. The curd whisper in maternal majesty. After birthing new cheeses and putting them to bed in the maturing room, Paul goes to sleep at night, excited to wake and do it all again. You see, this is in Paul's blood. Just like many of us, we wish we had cheese flowing in our veins. In fact, some of us probably do! To pay homage to Paul's fabulous fromage, he has created the Magnificent Seven Cheese Selection.
