Sullivans Cove Distillery is one of the oldest single malt whisky distillery in Australia, established in 1994 and producer of Australia's most highly awarded whisky. We are thrilled to share exciting whisky news from London - Sullivans Cove Distillery has taken home multiple wins at the Icons of Whisky and World Whiskies Awards 2025 (Rest of World). Our 18 Year Old American Oak Second Fill Single Cask Nº TD0033 has been awarded Category Winner Gold in the Single Cask Single Malt (13–20 Years) category, a testament to the depth, balance, and complexity that define Sullivans Cove single cask releases. As a Category Gold winner, this whisky will now compete for the title of ‘World’s Best’ in its category, with final results announced in London in March. Thirty years of Sullivans Cove and our grand re-opening, both celebrated in one unforgettable evening. Whiskies from each of our three decades were paired with an exquisite menu, designed to highlight the evolving character of our spirit. Guests at the anniversary bar enjoyed rare museum archive bottlings, poured for this one special occasion. Musicians of the Tasmanian Symphony Orchestra performed throughout the evening, each moment more breathtaking than the last. From a stirring choir of eight to an intimate string quartet and the deep resonance of a double bass, their music beautifully wove the story of craft, time, and artistry that defines us. Here’s to the next chapter of Sullivans Cove Distillery.

After 19 years, a superb expression of a French oak second-fill cask is ready. Distilled in 2005, and bottled in 2024, 19 Year Old Single Cask Nº TD0022 will be released via ballot on Sullivanscove.com on Monday, December 16.

Some years ago, five lost casks from the earliest days of our distillery were discovered. Four of these casks were vatted together and released in 2019, but the fifth showed extraordinary single cask potential. Recognising the fragility of the oak and the liquid, Heather Tillott and her sensory team transferred the whisky into an American Oak ex-Bourbon finishing cask for the final stretch of maturation. 24 Year Old Single Cask Nº HB0085 will be released via ballot on Sullivanscove.com on Monday, November 18.
