Hidden Gem in the heart of Central Alberta, where we've been dedicated to crafting premium Canadian whisky and aged spirits since 2018. At our distillery, we have a singular focus: creating high-quality, exceptionally smooth whisky with a character that's uniquely its own. In 2023, we opened our doors to a world of flavor and craftsmanship, where we've been crafting award-winning Canadian whisky. Our whisky is a celebration of taste, recognized and celebrated by both consumers and international expert panels through blind tastings. The exceptional taste of our whisky is a testament to the quality of the grains and barrels we use, with no additives whatsoever. Our dedication to purity and flavor is unmatched, and we source 100% Canadian grains, including malt grains located just 15 kilometers from our distillery, ensuring the freshest and finest ingredients go into every drop of our whisky. Our commitment goes beyond taste. We're dedicated to sustainability, continuously improving our distillation process to save energy and water. Our spent grains don't go to waste; they nourish local farmers' animals, completing a sustainable cycle. In our packaging, we strive to minimize plastic usage, opting for eco-friendly alternatives whenever possible. And when our efforts bear fruit and we begin to profit, we give back through carbon offset initiatives, contributing to a greener, more sustainable future.

    130 Years of Community Spirit: A Tribute to the Red Deer District Chamber In the 1890s Alberta, oak barrels were widely used for transporting goods like whisky, beer, grains, and salted meats due to their durability and ease of handling. The rounded design allowed easy stacking and rolling, essential for railway and horse-drawn transport. In 1894, a group of visionary business leaders, including the influential Raymond L. Gaetz, founded the Red Deer Board of Trade. Goods transported in barrels were part of trade deals happening on a regular basis. Their goal was to foster a thriving community and economy in the heart of Alberta. The Red Deer Chamber of Commerce initially focused on advocating for essential infrastructure like railways and utilities, it laid the groundwork for the city’s economic growth. In 1953, the organization rebranded as the Red Deer Chamber of Commerce, reflecting its expanded mission to support local businesses. Now, as it celebrates its 130th anniversary, it has transitioned to the Red Deer District Chamber, signifying its commitment to serving not only Red Deer but also the surrounding region, fostering a vibrant business environment for all. Throughout the decades, the Chamber has fostered initiatives like the “Red Deer Buck” campaign to boost local spending, hosted popular community events like trade fairs, and supported significant projects like the Red Deer Museum. With events such as Agri-Trade, the Chamber has kept Red Deer connected and thriving. 130 years later, the legacy of oak barrels in Alberta lives on—especially at Diony Distillery, where each one is filled with our liquid gold: whisky crafted from premium Alberta grains. Every barrel tells a story of Central Alberta’s rich resources and heritage, a story that resonates in every sip of our international award-winning whisky. Since 2018, we've been quietly perfecting our Canadian whisky, and just under a year ago, we finally shared it with the world. Today, we're honored to be recognized by the 130-year-old chamber as the New Business of the Year for 2024. This award celebrates not only our journey but the incredible potential of Alberta to produce world-class products & services such as whisky. That effort grew into the United Way Central Alberta, which has since played a pivotal role in addressing key issues like mental health, housing, and poverty. The 13th Annual Whisky Classic, presented by Gasoline Alley Law Group, is more than a whisky event—it's a celebration of community, local craftsmanship, and the power of collective support. This year’s event, on November 7th, promises an exceptional experience for whisky lovers and community supporters alike.     The Enduring Legacy of Whisky in the Music Scene Music has always been a powerful medium for storytelling, reflecting our experiences, emotions, and cultures. One timeless element that has woven its way through countless melodies is whisky. From the raucous celebrations of the Prohibition era to contemporary chart-toppers, whisky's influence on music spans genres and generations. A Toast to Prohibition and the Jazz Age The tale of whisky in music begins with the Prohibition era of the 1920s, a time when the production, sale, and transportation of alcohol were outlawed in the United States. While it was a time of restraint for some, it ignited a creative spark in artists and musicians who sought to capture the spirit of rebellion. Songs like “Whiskey, You’re the Devil” brought to life the unifying power of whisky, even when it was illicit. The lively rhythms of jazz clubs and speakeasies created an atmosphere where artists thrived, with the legendary Al Capone symbolizing both the challenges and allure of that era. Capone became synonymous with the roaring twenties, and his story found its way into the music of the time, inspiring tracks like “Al Capone” by The Specials. As the decades rolled on, whisky continued to find its place in the hearts of songwriters. Tracks like “Drunk (And I Don’t Wanna Go Home)” by Elle King and Miranda Lambert celebrate the joy and freedom that come with letting loose, showcasing how whisky can bring people together in a fun and uplifting way. Whisky has transcended its role as mere libation; it has become a character in its own right within the narratives of our favorite songs. As we listen to these tunes, we find not only enjoyment but a connection to the stories of others—stories filled with love, loss, celebration, and resilience. Both "Too Sweet" by Hozier and "A Bar Song (Tipsy)" by Shaboozey use whisky to symbolize connection and reflection. In Hozier’s song, whisky evokes bittersweet longing, while in Shaboozey’s, it represents carefree celebration. These modern tracks reflect how whisky remains a timeless symbol of both emotional depth and social camaraderie, bridging tradition with contemporary life. Whisky’s presence in music is more than just a reflection of social habits; it’s a testament to our shared human experiences. From the underground clubs of the Prohibition era to the mainstream hits of today and so much more, whisky continues to inspire and unite.

    Why Craft Whisky is a Priceless Pleasure: A Profound Peek into Value When you see a bottle of craft whisky priced at $100 or more, you might wonder what makes it worth the investment. But every bottle tells a story—one of tradition, artistry, and time. At Diony Distillery, our whiskies are typically over 46% ABV and come in 750 ml bottles. To give some context, that’s roughly equivalent to 19 standard beers at 5%. So when you pay CAD$100 for a bottle, if it was put into a glass and carbonated with water at 5% ABV, you're really paying about CAD$5.26 per “beer” -equivalent. Our whisky isn’t just about alcohol content—it’s about the depth of experience that comes from years of careful crafting. Such as great craft beer too! We love to keep it craft, and our process actually begins the same way as beer (and can be referred to as beer during fermentation) —with a mash made from premium grains. But while beer is brewed and can be enjoyed quickly after fermentation, whisky takes a longer path. First, there is distillation in our copper still where it receives an added transformation to reach certain flavours that are the result of a long fermentation but also interaction with kilometers or miles of copper during distillation. Then it is carefully proofed down at entry proof before entering into barrels for ageing. During this time, we lose some whisky to evaporation—what’s called the “angel’s share” and some to the "devil's cut" which is the alcohol entering into oak—but these losses makes what remains even more flavorful. Craft whisky is a blend of tradition and innovation. Distilleries like ours go beyond basic regulations. Minimum requirements such as the building code is a far benchmark to where we want to arrive -building over the building code takes more effort and resources but the result is always worth it. How do we do this? By experimenting with longer fermentation times, paying attention to individual barrel ageing, blending, finishing barrels and unique techniques, always aiming to create a whisky that tells a story in every sip. Of course, there are whiskies available at different price points, each offering something unique to the drinker. Whiskies priced at $30-$40 may be enjoyable for many, but our focus is on delivering a more refined experience for those who appreciate the additional time and effort we put into every bottle -a special occasion whisky. Craft whisky is about more than just drinking—it’s about savouring a product that reflects years of dedication, patience, and care.     From Whisky to Creativity: The Story of Toronto’s Distillery District While in Toronto for business, I took the opportunity to explore The Distillery Historic District —a place where the past and present collide in the most vibrant way. Once home to Gooderham & Worts, the world’s largest distillery in the 1860s, this district has transformed from its industrial roots into a cultural haven after closing in the 1990s. Now, the preserved 19th-century buildings breathe new life as a center for art, galleries, craft, and community. Walking its cobblestone streets, I couldn’t help but feel the echoes of the past mingling with today’s innovation. The district’s revival is a testament to reinvention, where breweries like Mill Street Brewery push sustainability and Spirit of York Distillery Co. distills spirits that pay homage to the legacy of Gooderham & Worts, blending heritage with modern craftsmanship. But what truly struck me was how the District brings people together. By day, it’s a lively hub of creativity, with galleries, performances, and local artisans. By night, the atmosphere shifts—the warm glow of string lights, the buzz of conversation, and the shared joy of great drinks and art. It’s a reminder that while industries may evolve, the power of craft and connection remains timeless. At Diony Distillery, we take inspiration from places like this. Our focus is on making whisky that honors tradition, using Alberta’s best grains, and offering a space where local artistry can be showcased.     Whisky Blending: The Art, AI and The Human Touch At Diony Distillery, blending whisky is an art—a craft honed by instinct, experience, and a dash of creativity. Each cask tells its own story, and our job is to bring those stories together into something extraordinary. Recently, we joined an American Distilling Institute webinar that explored a new frontier in the whisky world—technology’s growing role in blending. The idea of using AI to analyze flavors and predict combinations is fascinating. Imagine having a tool that can sift through mountains of data, suggesting blends we might never have thought of. Big names in whisky are already testing these waters, exploring how AI can help maintain consistency or uncover new profiles. Make no mistake, AI from some big distilleries have already released "AI blended whiskies". Yet the final call or tweaks to making whisky remains human. To some other whisky purists, whisky blending is about more than just data. It’s about that moment when you’re standing in front of a barrel, trusting your senses to guide you. Technology might point the way, but it’s the human touch that brings whisky to life. The human feeling and it's sharp senses bring something together for someone on the other end to experience similar feelings and senses upon tasting the whisky. The whisky maker and the whisky enthusiast share a hard arduous road to arrive at appreciating a given whisky...it is years in the making.     Rye Meets Ramen: A Canadian Distiller’s Journey into Japanese Blending This year, Diony Distillery had the honor of showcasing our whisky in Japan, thanks to the amazing support from the @Embassy of Canada to Japan and the Trade Commissioner Service | Service des délégués commerciaux. My journey to Japan in April, paired with a recent Alberta Ministry of Agriculture seminar on exporting to Japan, deeply influenced our craft and operations. Japanese whisky-making is an art form—meticulous blending of malts and grains creates whiskies that are both smooth and complex. Visiting a whisky store-turned-museum in Japan, I was immersed in its rich heritage, which has since inspired our approach at Diony Distillery. On my flight back home, I stumbled upon the anime Komada: A Whisky Family, which perfectly captured the delicate dance between tradition and innovation that shapes our craft. The depth of Japanese whisky culture is truly remarkable and touches every corner of the industry. The pinnacle of this journey came in June when our whisky was showcased at a special tasting event, recognized by DearWhisky.com as one of just five distinguished whiskies. This recognition reaffirms our belief in Canadian whisky's global potential. With fresh insights from Japan and the Trade Accelerator Program in Calgary with Calgary Economic Development, which enhances local businesses through expert trade guidance, we’re poised to refine our craft and explore new markets.     From Ella O. Pepper to Jeptha Creed Distillery to Beyoncé As the world buzzes over Beyoncé's latest rye whisky release, SirDavis, a collaboration with Moët Hennessy that’s already earning top awards, it’s a perfect moment to reflect on the incredible women who have shaped the whiskey industry long before celebrity brands hit the shelves. On a recent trip along the Kentucky Bourbon Trail, I was captivated by the stories of pioneering women like Ella O. Pepper and the Netherys of Jeptha Creed Distillery. Ella O. Pepper, often hailed as the "Queen of the Turf," broke barriers in the late 19th century by taking control of the James E.Pepper Distilling Co at a time when women were rarely seen in leadership roles. When her husband, Col. James E. Pepper, faced bankruptcy in 1896, Ella didn’t just stand by; she took charge. She bought and managed his horses and stables, turning them into a racing sensation and rescuing the distillery from foreclosure. Long before women had the right to vote, Ella was making waves and proving that women could excel and lead in the whiskey industry. Her resilience not only saved the distillery from bankruptcy but also set a precedent for future women in whiskey. Continuing this legacy, Joyce and Autumn Nethery (Mother and Daughter duo/owners) are transforming the craft at Jeptha Creed Distillery, proving that the spirit of innovation and leadership in whiskey is very much alive among women today. This legacy resonates deeply with me at Diony Distillery, where my wife Sophia W. has been instrumental in perfecting our mash bill and ensuring the smooth operation of our business. Although she has stepped back from distilling, her role remains vital to our success. As we celebrate these trailblazing women, it is important acknowledge women in the industry. The OurWhisky Foundation, a non-profit dedicated to empowering women in the whisky industry and advocating for a more inclusive and diverse environment. This foundation is helping to ensure that the future of whiskey is as inclusive as it is flavorful.
