A strong duo who know Thai cuisine inside out... From the coming winter season at the Gstaad Palace, starting on December 13, 2024, Chef Yothin Chookanhom will be serving Thai dishes and sushi hand in hand with Culinary Director Franz W. Faeh. Born and raised in Chonburi, Chookanhom started his career in gastronomy at the Akamon Japanese Restaurant Pattaya Chonburi and shortly afterwards moved into the hotel industry at the Grand Hotel Park Gstaad. For the 54-year-old, the move to the Gstaad Palace is a dream come true. It is no coincidence that Thai cuisine has found a permanent home at the Palace, as Franz W. Faeh, the hotel's experienced and well-traveled Culinary Director, worked in Bangkok and Asia for many years. Chef Yothin, who specializes in Thai and sushi, can rely entirely on his many years of experience when creating dishes. “In my dishes, I fuse moments of pleasure with techniques that I have discovered for myself. I'm always on the lookout, be it at the street market or in a top restaurant. Wherever I go, I try to incorporate these impressions into my menus. I often develop an idea from this and work out how I can implement it on the plate.” Yothin Chookanhom is also a respected teacher in his home country. He taught at a cookery school in Bangkok. He specialized primarily in the preparation of sushi. One of his most important lessons: Chefs should love what they create themselves so that they make guests happy. The Gstaad Palace is excited to have such an experienced chef, such as chef Yothin on our team. Wishing him all the best for the upcoming season!
