🌊🐟 TETRAS Pilot 4: Bringing Clarias to the Table! 🍽️👩🍳
As part of the CELF curriculum, chef and nutrition students, along with canteen personnel, took part in an exciting culinary competition where they prepared and presented eight unique Clarias-based dishes for tasting. While the #TETRAS partners were present to support the event, the main focus was on providing students with hands-on experience in working with sustainable aquaculture species like Clarias.
📌 Evaluation Criteria:
✅ Taste
✅ Visual appeal
✅ Presentation of sensory qualities
✅ Suitability for serving at the Danish Food Summit as a handheld tasting
🥇 The Winning Dishes:
The top three dishes will be showcased and served at the Danish Food Summit, where 2,000 tastings will be available! Visitors can also learn more about RAS and Clarias at the Business Lolland-Falster (BLF) and Guldborgsund Municipality (GBS) tent.
🔪 Hands-On Learning:
The day before the competition, students skinned and filleted Clarias for the first time, discovering its firm texture, central bone, and lack of small bones—making it an easy-to-work-with ingredient.
💬 Student Reflections:
🐟 Many had never tried Clarias before but found it similar to chicken, mild, and adaptable in flavor.
🥇 Ranked Clarias among their top three fish choices, alongside salmon and cod.
💰 If Clarias was the cheapest option, they would choose it for their own families.
