  • Make delicious eggplant and tuna rolls using PAFCO Sun Bell tuna flakes. Refer below a recipe from our PAFCO Cooking Contest; Ingredients; 1 can Sun Bell tuna flakes 2 eggplants 2 chillies 1 big onion 1/2 lemon juice 1 egg salt to taste breadcrumbs oil for frying Instructions; 1. Add finely chopped onions, chilies, salt to the tuna flakes and give it a good mix. Add the lemon juice. 2. Very thinly slice the eggplants. 3. Place the tuna mix onto the eggplants, roll it and secure with tooth picks. 4. Heat oil in a pan for frying. 5. Dip the rolled tuna stuffed eggplants in the beaten eggs and coat with breadcrumbs. 6. Fry in oil till golden brown. 7. Serve with your favourite sauce or chutney

Refer below for a simple recipe; Ingredients 4 can PAFCO Levuka Special tuna chunks 2 medium avocados peeled (pitted & cubed) 1/2 English cucumber (cubed) 1/2 medium red onion (thinly sliced) 1/4 cup cilantro 2 Tablespoons extra virgin olive oil 1 lime (juiced) 1/2 teaspoon kosher salt 1/2 teaspoon ground cumin 1/4 teaspoon cayenne (if desired) Black pepper (to taste) Instructions In a large bowl, combine tuna, avocado, cucumber, red onion and cilantro. In a small bowl, whisk together olive oil, lime juice, salt, cumin, cayenne and black pepper. Drizzle over salad and toss gently to combine. Serve immediately. Refer below for a quick and easy recipe; Ingredients: 3 cans PAFCO Sun Bell tuna flakes 1 red bell pepper, diced 1 jalapeno, seeded and diced ¼ cup red onion, diced 1 cup canned corn 1 cup black beans, drained and rinsed ¼ cup cilantro, fresh, chopped 2 tbsp lime juice ⅓ cup plain non-fat Greek yogurt ¼ cup mayo ½ tsp salt 1 tsp cumin 1 tsp chili powder 1 tsp paprika ½ tsp garlic powder Instructions Combine all of the ingredients in a large bowl. Mix to combine. Serve with tortilla chips, on a wrap, or on a salad!

Refer below for a quick and easy recipe; Ingredients 2 cans PAFCO Sun Bell tuna flakes 1/3 c. mayonnaise Juice of 1/2 lemon 1/2 tsp. crushed red pepper flakes (optional) 1 ribs celery, finely chopped 2 dill pickles, finely chopped 1/4 c. finely chopped red onion 2 Tbsp. freshly chopped parsley Kosher salt Freshly ground black pepper 8 slices bread, such as sourdough 4 Tbsp. butter 1 tomato, sliced 8 slices cheddar Directions Step 1 Preheat oven to 400°. In a large bowl, whisk together mayonnaise, lemon juice, and red pepper flakes (if using). Step 2 Drain tuna then add to mayonnaise mixture. Use a fork to break up tuna into flakes. Add celery, pickles, red onion, and parsley and toss to combine. Season with salt and pepper. Step 3 Butter one side of each bread slice. Top an unbuttered side with approximately 1/2 cup of tuna salad, 2 to 3 slices tomato, and 2 slices of cheese. Top with another slice of bread, buttered side facing up. Repeat with remaining ingredients and place on a large baking sheet. Bake until cheese is melty, 5 to 8 minutes.
