At Champagne AYALA, we aim to discover and highlight chefs whose responsible and sustainable commitments are making things happen. After previous encounters with David Sulpice in the South-West of France, then with Luke Holder in the South of England, and with Gianni Pinto in the capital of Spain, Maison AYALA meet with Cheffe Alice Arnoux on her homeland, the Arcachon Bay, leading to the 11th arrondissement of Paris, for this 4th capsule. Alice Arnoux is driven by a desire to find meaning in her work, to create something lasting and true. After honing her craft under the watchful eyes of culinary legends in Michelin-starred international restaurants, she boldly decided to embark on the entrepreneurial journey and is opening this year her first restaurant: Le Café de l'Usine. Her cooking is an ode to simplicity, where the ingredient is the hero, treated with the utmost respect and allowed to shine in its purest form. "The simpler, often the better," she says, a philosophy that guides her every move in the kitchen, balancing between traditional cooking methods and innovation. A quest of purity common to the one carried out by the team of Champagne AYALA. At Le Café de l'Usine, Alice Arnoux wishes to offer more than just a meal; a connection, a human experience that transcends the plate. It’s about sharing knowledge, tradition, and the beauty of simplicity. Her approach is singular, there is no set menu; instead, each day begins with the arrival of fresh produce from trusted local suppliers.
