Indian single malts have outperformed global giants like Glenlivet and Macallan, securing a 53% market share in 2023, according to CIABC Office. Of the 675,000 cases sold last year, 345,000 were from Indian makers, growing by 23%, while imported ones grew at 11%. This milestone reflects the progress of Indian whisky makers in terms of quality, challenging traditional perceptions. The trend has prompted Diageo and Pernod Ricard to launch local brands. Despite foreign brands panicking, Indian makers dismiss Scotch puritans and emphasize the fantastic quality and experimentation driving the demand for Indian single malts. Today is New Year's Eve 🎉 and National Champagne🍾 day (US). But what is the chemistry and history of Champagne.🍾 The perfection of the method that removes the unattractive clouds which had long bespoiled fizzy wine is widely credited, rightly or wrongly, to a monk and cellar master at the Benedictine Abbey of Hautvillers, one Dom Pérignon (1638-1715). It was at this Abbey near Rheims in France that a veritable revolution would occur, which transformed the region's fortunes and changed forever the production and popularity of sparkling wine. Champagne was born. After the death of Louis XIV of France in 1715, the court of the Duke of Orléans, Philippe II, made the sparkling version of champagne the drink of choice among the French aristocracy. During the 19th century, the modern champagne industry began to take shape.
