Protein-Packed Galouti Kabab Ingredients: 150 grams boiled chana 100 grams soaked soya chunks 50 grams roasted besan 150 grams paneer 2 green chilies 2 tsp dhaniya powder 1 tsp garam masala Salt to taste Herbs and spices (Cinnamon, black pepper, cardamom, red chili, coriander seeds, cumin) Instructions: Start by lightly roasting the herbs in a pan to release their aroma. Set them aside, then roast the gram flour (besan) until golden and fragrant. In a grinder, blend the black chickpeas, paneer, green chilies, and roasted spices into a smooth mixture. Set it aside. Grind the soy separately and mix them in with the chickpea mixture. Add besan, salt, dhaniya powder and garam masala and mix everything nicely. Heat a tawa (griddle) and lightly grease it with oil. Shape the mixture into kabab and cook them on both sides over medium heat until they’re golden brown and crispy on the outside. Ingredients: 1 cup Besan 6 tablespoons Ghee 3/4 cup Powdered Sugar 1 cup Doodh (Milk) 1/2 cup Milk Powder (optional) 2 tablespoons grated Nariyal (if not using milk powder) Roasted Badam aur Kaju (chopped or powdered) 1/2 teaspoon Ilaichi (Cardamom) Powder Kesar (saffron strands) soaked in 2 tablespoons garam doodh (hot milk) Instructions: First, heat 6 tablespoons of ghee in a pan. Then, add 1 cup of gram flour (besan) and roast it on a low flame until it turns a light golden color. Be careful not to over-roast the besan, or it might turn bitter! Once the besan is roasted, add 3/4 cup of powdered sugar and mix it well. This step is crucial to ensure the sugar blends nicely with the besan. Next, add 1 cup of milk and mix it in. The milk will give your Modak an extra fluffy and creamy texture! If you are using milk powder, add 1/2 cup of it and mix thoroughly. If not, you can add 2 tablespoons of grated coconut for a thicker texture, which adds a unique flavor! Now, add a royal touch with a bit of saffron soaked in warm milk and some roasted almond and cashew powder. This will make your Modak rich and flavorful! Also, add a little cardamom powder for a delightful aroma. After mixing everything, keep roasting until the mixture starts to separate from the pan. This indicates that the Modak mixture is ready! Transfer it to a bowl and let it cool for about 15 minutes. Once the mixture has cooled down a bit, use your hands or a Modak mold to shape beautiful Modaks. And there you have it—your Zero Maida Modaks are ready as prasad for Bappa! So, give this recipe a try and make your Bappa happy! Don't forget to share the photos of your Modaks and tag us!
