Eggless Chocolate Muffins: Looking for a deliciously rich and moist treat? These double chocolate muffins are the perfect answer. Whether you're vegan or just out of eggs and dairy, this easy one-bowl recipe will satisfy your chocolate cravings. With a combination of cocoa powder and dark chocolate chips, these muffins are sure to be a hit for breakfast, dessert, or any time you need a sweet indulgence. Enjoy the simplicity and flavour of these delightful muffins that everyone will love! Makes 5 jumbo muffins or 8 regular muffins Ingredients: 130ml (1/2 cup + 1 tablespoon) Milk (unsweetened almond milk or any plain milk of your choice) 1 teaspoon White Vinegar (or apple cider vinegar / lemon juice) 2 teaspoons Vanilla Extract 75g (1/3 cup) Light brown sugar / coconut sugar / cane sugar 60ml (1/4 cup) Oil (any neutral oil for baking) 140g (1 cup + 2 tablespoons) All-Purpose Flour 15g (3 tablespoons) Cocoa Powder 1 1/2 teaspoons Baking Powder 1/4 teaspoon Baking Soda 1/8 teaspoon Salt 120g (3/4 cup) Dark Chocolate Chips 🍫 Method: In a mixing bowl, combine the milk, vinegar, brown sugar, oil, and vanilla extract. Add all the dry ingredients and mix until fully combined. Fold in 3/4 of the chocolate chips. Cover and let the batter rest at room temperature for 30 minutes. Line a muffin tray with muffin liners (I used a jumbo muffin tray). Fill each liner with batter until almost full. Bake at 400°F for 8 minutes. Then, reduce the temperature to 350°F and bake for another 8-10 minutes, depending on the size of the muffins. They are done when firm to the touch on top. Add the remaining chocolate chips on top. Let them cool on a wire rack for 10-15 minutes and enjoy! Store at room temperature in an airtight container for 4-5 days.
