  • THE TERRIBLE INCREASE IN FUEL PRICE IS NO LONGER AN ILLUSION 🍽️Monday morning greetings dear Restaurateurs; 🤵🏻♂We understand what a lot of you are simply going through in your restaurants across Nigeria this time. 🤦♂️We also learnt of the new hike in price of cooking gas now! This is a bad time for us but not enough to consume your business. It's a time to birth the "efficient manager" in you. What is being Affected 1. Increase in food cost 2. Increase in various operation costs 3. Indirect decrease in workers living 4. Decrease in customers buying power 5. Inefficiency in all operations requiring power supply 7. Increase in spare parts and maintenance cost 8. Etc. Few Ways to Make Adjustments 1. REVIEW YOUR MENU Before you start to make changes to your menu, be sure to conduct an audit and recost all menu items. Take notes on important factors such as items still selling, customers specific sentiment about price and size of each dish. Evaluate these observations against your current CM. From here you can make informed adjustments accordingly. 2. TWEAK YOUR CURRENT DISHES If for example there is an unbearable rise in the cost of chicken wings in your area. Instead of remaining there, you can choose to serve tenders. Slightly tweak other menu items that have gone too costly. 3. CONTROL YOUR PORTION SIZES A key component to portion control is training your cooks and waiting staff to weigh or measure Every production ingredients and the food served to customers respectively. Make sure portions are consistent this time. No jokes with anybody! 4.   • 🤵🏻♂👩🍳For Restaurateurs starting out, please listen... If you are just starting out, not planning well may be your worst mistake as a Restaurateur. One of such planning is on labor sustainability. I got into a conversation with 7 months old Restaurateur yesterday seeking RBFirm manager placement to drive what I call "survival growth" of his infant brand in Lagos. It was visible the brand will not be able to afford RBFirm contract manager even for the next three month. Sadly, I got to know the brand is even currently battling to pay existing staff because the new restaurant isn't doing as well as the owner expected already. Apparently, there was no plan in place to support the labour force for at least the first 12 months. The "poor" restaurant started paying it's staff from day 1. And this is a common gamble among many new restaurant owners and independent expanding Restaurateurs. I don't know what your consultant tells you but this is a mistake you should never fall into. Irrespective of your location and size of revenue, please 🙏 give that restaurant at least 6 to 12 months breathing space before mounting it's own financial pressure on it.
