    Let me confess. And if you are a business leader or a leader in any part of hospitality reading my confession I need your opinion on this I have had the privilege of advising a lot of restaurant brands in Nigeria on employees development, building work culture and sharing their vision with their team Although it takes a lot of energy for the restaurateurs to infuse new growth systems like this and stay consistent, many restaurateurs are not yet willing to take the pain Why Because they feel, workers in the sector don't last and it's a waste of time and energy My question is, are you building your business for the employees or setting a great system to ensure high productivity whether they stay or leave? Truly, the rate of staff turnover in the restaurant sector is becoming more astronomical by day But if there are sustainable systems, management and leadership structures that can reduce this for you.   • One thing that can crash your restaurant is customers illness from your food We have seen Restaurant Owners who pay very close attention to food safety We have also evaluated outlets where the kitchen is simply at the mercy of God. It's always easier to destroy than to build. Every single thing you do in your Restaurant matters to customers health and safety. The worst thing that can happen to you as a restaurant owner is to find your customers falling ill after dining at your restaurant. Contacting salmonella from restaurants is the commonest I've seen! It's something completely avoidable but not too many restaurateurs seem to be paying extra attention. It's easy for your food to be contaminated with SALMONELLA from improper handling and storage. Salmonella can be contracted in a restaurant through various means, including: ✓Undercooked or raw eggs: Eggs can contain Salmonella bacteria, which can survive if the eggs are not cooked thoroughly. ✓Raw or undercooked poultry: Chicken, turkey, and other poultry can carry Salmonella bacteria, which can be transmitted to humans if the meat is not cooked properly. ✓Insufficient cleaning and sanitizing: If surfaces, equipment, and utensils are not cleaned and sanitized regularly, they can harbor Salmonella bacteria. ✓Inadequate food storage: If food is not stored at the correct temperature or in a clean environment, it can become contaminated with Salmonella bacteria. ✓Infected food handlers: If a food handler is infected with Salmonella bacteria, they can transmit it to food and surfaces. ✓Contaminated water: If the restaurant's water supply is contaminated with Salmonella bacteria, it can affect food and drinks. ✓Poor pest control: If pests, such as cockroaches or rodents, are present in the restaurant, they can carry Salmonella bacteria and contaminate food and surfaces.     Early last week, I was honored to be invited to #ChannelsTV's Business Morning show to share my insights on the impact of the economic headwinds on Nigeria's restaurant business sector. On the show, I extended big eulogies to all the operators across the country for the resilience they put into driving sustainable growth and keeping the sector alive despite the consistent economic hurdles. I clearly highlighted the impact of increasing running cost particularly the rising % food and overhead costs especially on the smaller restaurateurs scattered all over the country. Hence, I emphasized the importance of; ✓Internal business structuring to optimize operations and reduce all forms of shrinkage. ✓Formation of local clusters to foster collaboration, shared knowledge and opportunities. ✓Sourcing ingredients directly from the source, rather than relying on vendors, to reduce costs and improve quality. These are crucial steps in helping Nigeria restaurant sector remain sustainable and competitive in the face of economic uncertainty.   • Let's share this little "process to success" story here KFC, also known as Kentucky Fried Chicken, was founded by Colonel Harland Sanders in Corbin, Kentucky, USA in 1952. Born on September 9, 1890, Sanders grew up in a poor family and had to drop out of school to work and support his family. Sanders' passion for cooking led him to develop a secret recipe of 11 herbs and spices that became the cornerstone of KFC's success. In 1930, Sanders operated a service station in Corbin, where he also served food to travelers. In 1935, he opened a restaurant, Sanders Court & Café, which seated about 20 people. The restaurant became popular for its fried chicken, and Sanders was eventually awarded a contract to feed travelers on the Louisville and Nashville Railroad. In the early 1950s, a new interstate highway was built, diverting traffic away from Corbin and threatening Sanders' business. Undeterred, he franchised his chicken business, and the first KFC franchise opened in Salt Lake City, Utah in 1952. The franchise model allowed KFC to expand rapidly across the United States. KFC expanded internationally in the early 1970s, opening restaurants in Japan, the United Kingdom, and Australia. Today, KFC is one of the largest fast-food chains in the world, with over 24,000 locations in more than 140 countries. KFC became the first fast-food chain to expand internationally, opening its first overseas restaurant in Japan in 1970. KFC's branding, including its logo, packaging, and advertising today has become iconic and recognizable worldwide. KFC has expanded into new markets, including China, India, and Africa, and has adapted its menu and marketing to suit local tastes and preferences. KFC has implemented sustainability initiatives, such as reducing energy consumption, waste reduction, and sustainable packaging, to minimize its environmental impact. KFC was named the "Best Fast Food Chain" by the American Culinary Federation in 2019. KFC was ranked the "Most Popular Fast Food Chain" in a survey by YouGov in 2020. KFC was named one of the "Best Employers" by Forbes in 2020. Among others This is perhaps a widely known process to success story raped in consistency and resilience. African Restaurateurs have got to learn to dream bigger, keeping the vision alive, building the right structures and workforce while scaling intentionally.     Conducting thorough background checks on potential employees is a crucial step I encourage every Restaurant owner to learn to take. It should be part and parcel of your hiring process. I have had the privilege of watching countless restaurateurs interview people to join their teams. In most of such conversations, the focus has always been on "salary" You keep asking to see if the applicant's budget is what you can afford, ignoring all there's to look out for when hiring. One of our clients had just hired this chef who, according to her, was full of ideas and quite expensive. But as usual, the right checks were never done till I insisted. This is just a simple less than 10mins action that determines the next 6 months level of productivity. A quick call to a candidate's previous place of work can provide invaluable insights into their character, work ethic, and trustworthiness. This due diligence can save you and your business from potential losses and reputational damage. Conduct background checks before you hire The red flags to watch out for when conducting such checks should include; Gaps in employment history: Unexplained gaps in a candidate's work history can be a red flag. Negative references: Previous employers may share concerns about a candidate's honesty, reliability, or work performance. Don't ignore it. Inconsistencies in their story: Verify the accuracy of a candidate's claims about their experience, skills, and qualifications. 9 out of 10 will never tell you they were fired!
