    Contemporary Asian cocktails influenced by modern Asian design and style at the Living Room at W Sydney Hotel. Cocktail Professor helped with the pre-opening, bar concept, menu development and trainings. Drinks that are light on the palate, letting the quality and purity of ingredients shine through and with the use of our curated selection of funky sake’s and soju’s. Futuristic artistic glassware and playing with abstract shapes and colour’s, all drinks are inspired on the different Asian cuisines. On the picture you can see ‘JAYA’ a Japanese-Indian cocktail with lotus paste, an organic saké, Williams Pear served with Sauvignon Blanc ‘bubbles’. And the Japanese-Chinese ‘ZIMO’ where we blended fresh Soursop with cherry blossom, Absinth and cucumber bitters. And ‘YUKI’ a bittersweet Indonesian-Japenese cocktail with pomelo vermouth and coconut oil washed soju served with pomelo pearls. Please come by at Living Room and let us know what you think!     SECRET MEMBER BARS. When conceptualizing and designing a new venue, we prioritize signature design elements that create a unique and immersive experience, telling the story you envision. At the Social Club, our goal is to craft a ‘home away from home’ ambiance where frequent members feel a deep sense of belonging and earn extra privileges, symbolized by receiving member keys. One of these exclusive privileges is access to our secret member bars. Strategically concealed behind wall panels throughout the venue, these luxury, private home-style mini bars are reserved for our distinguished members and their guests. Each hidden bar features fridges stocked with pre-batched craft Old-Fashioned cocktails, Japanese mixing glasses, an extensive selection of bitters, and hand-picked clear ice blocks. Members can enjoy the tactile pleasure of stirring their own cocktails or, for a touch of vintage charm, ring our ‘Old Fashioned’ doorbell to summon a bartender who will craft the perfect drink for them. This innovative bar concept and design is part of the ‘Social Club’ by Marriott Global Design Asia Pacific, a collaboration between Cocktail Professor and Studio Numen.     FLAVORED ICE. Flavored ice as a creative way to enhance cocktails. By thoughtfully incorporating flavored ice, bartenders can elevate the drinking experience. It not only adds a visual appeal but also introduces new layers of flavor as the ice melts, transforming the drink over time. Consider the melting rate of the ice. Larger cubes melt slower, providing a gradual release of flavors, while smaller cubes or crushed ice melt faster, offering a quicker infusion. This cocktail is the ‘Rum Kelapa’, where we blend a round tropical white rum with fresh carbonated coconut water, added using a vintage soda siphon to miniature mango ice balls right in front of the guests. The drink starts with crisp, clear flavors and gradually transforms into a more refreshing beverage with tropical fruity notes as the ice melts. In this project, we not only provided bar consultancy and training but also created content for the pre-opening. We produced videos and photography for social media and press, ensuring the online experience of the bar matched the offline experience.     TAKING INSPIRATION FROM JAPANESE BARTENDING. Japanese bartending has gained global admiration and their bartenders are known for their meticulous attention to detail. Every step, from ingredient selection to the final presentation, is executed with precision, intent, and care. This results in cocktails that are not only delicious but also visually stunning. Central to Japanese bartending is the philosophy of Ichi-Go Ichi-E (一期一会), which translates to "one time, one meeting." This concept emphasizes the importance of cherishing each encounter as unique and irreplaceable. Bartenders focus on creating a personalized and memorable experience for each guest. They prioritize mindfulness and presence in their work. Engaging with guests, fostering genuine connections and creating an immersive atmosphere. This approach enhances the overall drinking experience, making it more than just about the beverage. And last but not least, Japanese bartenders are renowned for their refined techniques, such as the 'hard shake' and precise stirring methods. These skills are honed over years of practice, ensuring that each cocktail is crafted to perfection. These elements combine to make Japanese bartending a fascinating and respected art form worldwide.     BAR MISE-EN-PLACE. Mise-en-place is a French term meaning "everything in its place." In cocktail bars, it refers to the meticulous setup and organization of all logistics. Including homemade ingredients, carefully prepared garnishes, pre-batched cocktails, hand-cut ice, and strategically placed barware. This practice ensures efficiency, consistency, and a smooth workflow during busy shifts, allowing more time for presentation and communication. Each bartender has a well-stocked station, minimizing movement and ensuring everything they need is within reach. In the picture you see our signature blue peaflower salt and cumquat fruit leather sheet that we used as garnish in Coppersmith Bar in Kuala Lumpur. For some of our projects we even employ a dedicated prep person, or "prep-guy," only responsible for mise-en-place. This allows bartenders to focus on crafting drinks and serving customers efficiently. Implementing these systems can significantly enhance the efficiency and quality of service in a cocktail bar. Behind closed doors, Bar Botan transports you to a different world, blending nature-inspired design with an adventurous and curious craft bar atmosphere. The bar is designed to feel like a grand garden, with bar stations featuring built-in plant wells and a back bar resembling a botanical laboratory to enhance a wild range of flavors directly from nature—all in full view of the guests. We combined our extensive bar experience with our design expertise, in collaboration with our sister agency, Studio Numen. Our approach considers not only the aesthetic appeal of the space but also its functionality and sensory impact.     DRINK OF A WISEMAN. The scientific name for banana, Musa sapientum, means "fruit of the wise man." In this botanical-forward cocktail, we waited until this wise fruit was blackened, allowing it to develop bold, overripe flavors. We then blended it with a dash of orange blossom water, juniper spirit, and fermented grapes. This signature cocktail was developed by Cocktail Professor for a botanical bar program for Marriott Global Design Asia Pacific. It is part of a range of drinks inspired by nature's magic.
