We had a fantastic time at IFT 2024, and we hope you did too! 🌈 Our build-your-own Rainbow Snack Bar was a hit, pushing color and flavor boundaries as visitors explored bold hues like blue, green, and violet alongside familiar red, orange, and yellow shades. Visitors voted on the most appealing color/flavor combos and shared their motivations: Violet-Hued Salt & Balsamic Vinegar Seasoning: Colored with spirulina and beetroot, this standout favorite dazzled with its radiant hue and nuanced flavors. Bright Yellow Yuzu Aji Amarillo Seasoning: The unique mix of yuzu, citrusy notes, and heat, colored vibrantly by EXBERRY®’s new algal carotene, was the most popular choice! In contrast, blue and green shades were less popular, possibly due to their rarity, highlighting the need for a clear flavor story despite their visual appeal. Our survey revealed that while flavor was the primary driver, 40% of visitors considered color an equal or main factor. These insights highlight the power of color in drawing attention, shaping flavor perception, amplifying shelf appeal, and telling a flavor story even before tasting.
