BY: etimes.inThis monsoon season, forget the regular pakodas and try this unique and tangy Kache Aam Ka Pakoda, which is made along with onions and potatoes to balance the flavours. This recipe by Chef Nandan, Cluster Executive Chef, The Dukes Retreat is a must try.

5-8 raw mangoes, 2 green chillies, 1 tsp grated ginger, salt to taste, 2 potaotes, 2 onions, 1 tsp fennel seeds, 1 tsp ajwain, and oil for frying

1 tbsp chilli powder, 1 tbsp dry pomegranate, 1 tsp garam masala, 1 tsp coriander powder, 1 tsp kasuri methi, and 1 tsp chat masala

To make the pakoda masala, add all ingredients in a blend jar and blend into a fine powder. Set it aside.

Wash and cut onions, potatoes and mangoes slices nicely.

In a bowl add onion, mango, potato, besan, rice flour, green chillies, grated ginger, salt to taste and 2 tbsp pakoda masala.

Add water to make it a batter of thick consistency, so that all the veggies are coated well.

Heat oil in pan. Once the oil is heated take a small portion of the batter and drop it into the hot oil.

Deep fry the pakodas on a medium flame until they turn golden and crispy. Serve hot with a topping of pakoda masala along with green chutney on the side.
