With plans to revitalize 300,000 hectares of forests, rehabilitate eight million hectares of pastureland, and plant 10 million trees in national parks, Saudi Arabia is committed to reducing carbon emissions and restoring biodiversity. According to the UN Food and Agriculture Organization (FAO), illegal, unreported, and unregulated (IUU) fishing activities are responsible for the loss of 11–26 million tonnes of fish each year, which is estimated to have an economic value of US$10–23 billion. What is Sustainable Gastronomy? Gastronomy is sometimes called the art of food. It can also refer to a style of cooking from a particular region - in other words, local food and cuisine. Sustainability is the idea that something (for example, agriculture, fishing, or even preparation of food) is done in a way that is not wasteful of our natural resources and can be continued into the future without being detrimental to our environment or health. Sustainable gastronomy, therefore, means cuisine that takes into account where the ingredients are from, how the food is grown, and how it gets to our markets and eventually to our plates At Topian we are proud to support The NEOM x CARE’s Academy that is designed to identify, nurture, and train the future generation of Saudi chefs. Through its ongoing chefs’ camps, members of the academy have the opportunity to learn how to work with local ingredients, approach their culinary development with a sustainable lens, and explore new techniques under the direction of chef Norbert Niederkofler and his team. #NEOM #Topian #CARE's #chefs
