Anthony Fardet is a research scientist (PhD, Aix-Marseille University) in holistic, preventive and sustainable diets at the French National Institute for agriculture, food and Environment (INRAE). He studied the link between food processing and food health potential within the framework of food system sustainability, with a focus on ultra-processed foods. In the end, his works has led to the elaboration of new paradigms for preventive diets such as the 3V’s rule, the involvement of the food matrix degradation and artificialization in the development of chronic diseases or “Healthy Core Metabolism”. He has also deeply studied the consequences of applying holistic and/or reductionist approaches, and empirico-inductive and/or hypothetico-deductive methods in food and nutrition research. He has published widely about these themes in the context of global health, including human health and food systems.
