Scope

Technical requirements and methods to classify objectively the level of degradation of muscle structure in comminuted and/or fragmented poultry meat. This method should be accepted for quantification of level of degradation of muscle tissue as a prerequisite for grading comminuted and/or fragmented poultry meat in order to support legislation.
