I'd say it's more an action/adventure game with metroidvania level design which tends to be, indeed, a bit inspired by dark souls. If you're into 128 bits era of action/adventure games, it might be something worth of your love. I'd recommend playing the first game before (Fallen Order), as this one is a sequel ; it's not as good as the first one (despite being good enough), it's more poorly optimized and it's a sequel so....it's a better experience to play Fallen Order first.
You will have zero bang-bang dakka-dakka from distance in both of these games, though.
If you want some "bang bang" from a distance, there are plenty Star Wars FPS out there. Dark Forces and Dark Forces II are on Steam, Mysteries of the Sith also, but they might be tricky to run and configure for a modern computer, if you don't have the patience or the experience required to mess up with your game files, I would not recommend them to you. The sequels, Jedi Outcast and Jedi Academy, are worthy of your attention, I love them both, they are more TPS or action/adventure focused, even if you can play them as first person shooters. They might offer you the dose of "bang-bang dakka-dakka from a distance" you're searching for. And they are definitely "being a jedi" experience !
There is obviously Star Wars Republic Commando, 100% FPS, in which you control a clone. It's an enjoyable game enough, but the first levels can be very annoying with the screen shaking again and again to simulate earthquakes (VERY annoying). Also, this game's story is happening during the prequels (episodes 1 - 2 - 3) which you didn't see, so it might not be the Star Wars you are looking for, as it is a whole different tone and universe, and you might not understand what the f*ck you're doing there, who you are shooting, who you are at all, really. Decent game with flawed first levels and a setting you might not enjoy. You should watch its steam page at least to see if you're interested in it.
As you're looking for Boba Fett stuff...there is a Boba Fett game on GameCube (well, a Jango Fett game, technically it's the same DNA so...), not available on Steam but easily playable on Dolphin ; but it's a meh game at best, and it's happening during the prequels, so again, it might not be the Star Wars game you're aiming for.
Reading your post, I guess you're not interested in the Lego games or the strategy / 4X games to have your fix of Star Wars, nor the space sims or racing games. Because there are really good ones out there, both inside and outside of Steam. I get you're into action/adventure or plain action stuff.
Then, if pure "action" or "action/adventure" is the thing, if you're not interested in the Jedi Outcast / Jedi Academy games because of their age, I would definitely go for Fallen Order. It might not be the exact "bang bang from a distance" you're searching for, but it's a very solid and well made action/adventure game with an awesome level design, and adjustable difficulty if you're ever frustrated by the small yet real dark souls inspiration.
If you're going for "action" only without the "adventure", the Battlefront games are for you. Both of the originals are very good and timeless, and you should definitely try them if you're interested in the concept, but I would recommend you the reboot (not the first one, but the second one, Battlefront II 2017). Insanely beautiful for it's age, still very much played, lot of fun, easy to get into, great maps, tons of action, decent gameplay. It has a single player campaign which is lame, but you can both play online or solo with bots and have hours, if not hundred of hours, of fun out of it. Battlefront II 2017 is also very cheap when it is on sale, it's an insane worth for the money asked.
Also, it might not be what you're searching for, and it might be a little harder to get into at first, but boy, you should seriously consider trying the Knight of the Old Republic games. If you ever enjoyed Mass Effect, Dragon Age, Jade Empire, the post-baldur's Bioware era, you will have a fantastic game with KOTOR and its sequel. And you'll have your fix of Star Wars adventures, guarantee, despite the gameplay being RPG and not the action you might be searching for.
To conclude, I think you should consider these instead of Jedi Survivor :
- Jedi Outcast / Jedi Academy
- Jedi Fallen Order
- Battlefront II 2017 / older Battlefront games
- Knight of the Old Republic / Knight of the Old Republic II
I would not wait for Outlaws at all. I mean, it's an Ubisoft game. What do you expect, if not rushing through boring open world areas from flat-icon-meaning-fedex-quest-A to flat-icon-meaning-UPS-quest-B for forty hours ?

I recently watched a review of a demo-player who is part of a group who doesn't go for the click-bait over-the-top stuff. They're a group whose preferences are consistent unlike some of the more famous reviewers out there with oodles of followers. I can measure their preferences against mine even when our preferences differ because they're consistent.
My hype went from "meh" to "interested". It'll be difficult to get me beyond just "interested" for an Ubi-published game even though it's Supermassive who's developing it.
(For one, it's that client of Ubisoft's. Every other time I use it, it'll ask for elevated permissions several times, but it'll just keep going even though I'll deny it every time. There's something fishy, and I don't like it. For another, it's their choice in anti-cheat from a company that hasn't updated its site and social in years who last complained about M$ closing a security hole they were exploiting. They claimed that turning off core-isolation didn't lower security despite the same statement also claiming that they were using the same techniques as hackers. They claimed that the fact Core Isolation didn't exist previously is why it wasn't needed now, which is like saying using FAT is just as secure as NTFS because nobody used NTFS before it existed. No thanks on any Ubi-published MP games until they find someone who doesn't have to resort to rootkits to prevent cheating. Hopefully, Outlaws won't have MP and won't need the outdated BattlEye.)
That said, as mentioned, Jedi Outcast and Jedi Academy have more ranged weapons.
Boba Feet sounds like an interesting game. I always wondered what a Mandalorian's feet look like! LOL
Ppl still sreams about stutters in js tho.
This is probably the same as the previous one, so it's a little dark-souls'y, but not that much.
If you want to run around with lightsaber and other weapons, i would recommend Jedi Academy (and previous one as well, but jedi academy is just better).
Or force unleashed, but it's kinda wonky (the story is good, but controls could be better).
OR - if you want a star wars themed game, but without godlike weapons and powers, Republic Commando is your boi. Jesus, this game is so effin good.

Outcast/Academy/RC are okay, I want those with modern graphics tho (quake1 gameplay style and physics in lightsaber fights look hilarious time to time in academy/outcast). But main problem with old games is thier compatibility with modern systems and monitors resolutions, a real pita. (Example, not really so old Farcry3 need some tweaks or it practically burn my system with over 500fps even under v-sync on. Thanks to g-sync and my monitor I able to set proper fps for it and my gpu stop to scream with 101% load)
BF2 will be nice, but its pvp (after I saw gameplay in general I kinda want to scream 'Wait foooor Titanfaaall' tho). As for old republic I want to avoid any mmo-alike. But pve co-op is okay, even very welcome.
I'm coming back on this thread maybe wayyy too late but, I just wanted to say : Knights of the Old Republic =/= The old republic. Knights of the Old Republic are not MMO games. They are RPGs, kinda Mass Effect's ancestors in Star Wars universe. It's the same formula as Jade Empire and the console version of the first two Dragon Ages.
It is very confusing, because after the first two KOTOR, they released "the old republic" which is a MMO and shares the same name, the same aesthetic and more. But the two first KOTOR games are not MMOs and might be very much worth looking into, even if their graphics are obviously dated and you might encounter the compatibility problems you were just talking about.
