I would love it if even more if we could have a similar mechanic for the church, sending our overspill of offspring to join the faith and they work in our temples. So you end up with 3 different aspects the crown, the faith and the military. The three pillars of our society.
Yes, the option to make a priest will also be there - the Church will thank you with attitude and rings. True, this lord will leave your province and go to the castle of St. Sophia.
Not quite the same mechanic as the knights, as it would be better if we could keep them in the province and they could help with religious related tasks. But at least it isn't as terrible as simply wandering off. Still it would be great if we had a middle class in between that they could fill (like the knights) and create some more interesting dynamics.
