Keys are customizable per action for keyboard users.
For game pads, RE4 allows you to choose from three different control schemes. Since the game, by design, doesn't allow you to run 'n gun, there is no need to use both analog sticks during aim mode. The aiming is fixed to left analog stick.

Mouse and Keyboard flexibility are really important to me, because I can't use the controller (tendonitis).

GC controller had two sticks. You basically used the C-stick to turn the camera so I belive this will still be an option. RE5 played sighly differnt from RE4, since you could actually walk sidways, unless you would set it to the RE4 controls in which the second stick was only good for moving the camera around like in RE4. So nothing has really changed there.
