1) Opening the map and checking a town out gives you a general idea of what beers that town is interested in buying. It also shares some trend stats to help make educated guesses and plan future production. I think that the best solution to what you're asking would be Cellars full of Barrels filled to the brim with beer you can sell at a moment's notice. Barrels offer an amazing level of control over your production!
2) On fulfilling contracts, as soon as a brew is ready - given that the brew satisfies the conditions of the Ale Order - you can click through the mug, open the map, and long press on the contract as it appears on the map next to the town that put the order up. I know it's easy to miss, we might be considering changes.
3) Ah! Yes. That's a very conscious choice from our side. Every room can only have one piece of its key equipment built-in (for example the Laboratorium has the Escritoire, the Brewery has the Stove and the Fermentor, etc.), with the rest of the furniture chosen for the room supporting that (with bonuses etc.). This means that you can only have one Escritoire per Laboratorium, and hence one researcher per Laboratorium. Building an extra room of the same type would allow you to have a second Brewer, Researcher, etc. In the demo, we have disabled building a second room of the same type, as we found it might confuse the players.
