If I beat all the levels on normal and then impossible does it unlock the acheivement for beating hard?

I don't think so, but there's really no need to play the game on Normal. If you can do it on Impossible, you can do it on Veteran. I'd recommend doing your first playthrough on Veteran and your second on Impossible.

I seem to remember that a similar question was asked in the Kingdom Rush: Origins forum and someone tried it and found that you do indeed get the achievement. There is also the fact that I have never played Kingdom Rush: Origins on easy or normal difficulty, but I still have the achievement for completing the game on normal difficulty. So I would assume if you never play the game on veteran difficulty and then complete it on impossible difficulty, you would also get the achievement for veteran from completing impossible.

Thanks. I had beaten a few levels on normal wasnt sure i wanted to replay them. Switched to hard but might switch back if i hit a road block
