damage scaler
so im not sure which skill or combo of skills creates this but your damage can go up on enemy kill just like when you get the soul eater skill for your HP. if anyone knows what specific skill(s) trigger this, please let me know.

This isn't it, only the Bear Fist scales with health. The skill you're looking for is Survival Instinct. Attack dmg scales every so many times you dodge.

yes, I used Survival Instinct with as much dodge as I could find, at final boss you can have around 200 attack, and with the same skill that gives you shield when you dodge you can get crazy amounts of shield as well.

I think an under utilized weapon is Archery. It's pure ♥♥♥♥ early, and I don't actively go for it, but sometimes - very early - if I don't feel like blowing rerolls, or I do and nothing good pops up, I'll grab it. It actively scales with your atk dmg, which should be going up with Survival Instinct and the occasional +5 atk dmg, but it also scales with how many times it connects. It'll never be a 'good' skill because it's single target, random, and can miss, but at max rank 3 arrows come out and on a few runs I think i got the bonus stat up to 500, and that's not including the rest of the formula. And the little knife.. scales with atk spd. Falling axe when you get hit scales with 260% dmg at max rank, with 2 axes falling.. lots of scaling stuff, obviously not Hp like Bear Fist, but allows different build paths.
I find myself using the same skills over and over again. I usually never get defensive unless forced to and go for straight offensive abilities. there's not a lot of incentive to bother with some skill with dodge if you're just gonna get pummeled in the cave stages.
