Scenario 1:
I played the free Episode 1 for 8 hours, then purchased the Complete Season (Episodes 1-5), but within 14 days period I've decided to change my mind and refund them.

I purchased the Complete Season (Episodes 1-5) and played the Episode 1 for 8 hours, but within 14 days period I've decided to change my mind and refund them.
I think in Scenario 1 you could technically be eligible for a refund, but in Scenario 2 you wouldn't as you have already played the purchased Episode 1 for over 2 hours.

In practice once you bought the game you need to prove that you haven't breached the seal and that you have when you downloaded the game.
The policy of two hours is technically a one hour to test if the game is running on your hardware and that the program start working. Technically steam can extract that if you encountered lots of error and crashes when playing the game as they're sent to steam, it can as well see what hardware you running at.
The only one who can do anything is your bank who can chargeback and you end up in a legal dispute with Valve. Since technically if you don't own it and you giving it back to Valve in the same condition how can it be considered stealing.
It's more a matter of subjective taste, but the remaster has a more "realistic" (when it's not suffering from glitches and animation bugs) art style, while the original is more stylised.
Thanks for that! Now that I am done with the main game of True Colors, I resumed my gamplay of 2017, finished chapter 1 and will continue playing the original without considering starting from scratch with the remaster.
I was back than and am still fine with the art style of the original, I had to get used to it again however after all the years of the long break.
