your assessment of the pvp is correct -- it all revolves around backstabs. because they hard counter most things. stick with it if you like it -- you can get very fine at backstabs.
as for bleed -- if you roll through the hit that would otherwise pop the bleed, it cancels it. works in ER too actually.
Find the honesty in your post refreshing. Think about it this way, maybe you made some newb's day by being his first invasion kill! I will never forget mine on the roof of Sen's Fortress.
DS1 PvP is mechanically complex, and isn't just a moshpit like in Elden Ring. Elden Ring's PvP is the most casual-player friendly, because you can just use generic spam with good gear and pull through against anyone but the decent players.
If you really want to get into DS1 multiplayer, I strongly recommend looking up some videos about how latency works in DS1, how to space properly, and various other mechanics (and important counters) that will give you an edge in PvP. DS1 has the highest skill ceiling of all the games by far, and it shows.

ds1 is a slower and more methodical game, so you need to know the methods to succeed.
that goes doubly for pvp.
When starting a new character, you should always beeline Wolf Ring (+40 poise) ASAP, it makes an immense difference in both PvE and PvP. It can be acquired without fighting any bosses.
If your poise is low you'll be just chain stunlocked by both enemies as well as other players.
And if you have high poise, you just simply walk through the other player's attacks and then backstab them. That's basically DS1 PvP in a nutshell, and why very few people like it, nowadays.
But yeah, all in all, the fighting is slower and mistakes are much more punishing than Dark Souls 3 or Elden Ring.

thus way if you getting backstabbed alot - perhaps you are too ambitious about pulling out a cheap backstab and you are getting punished for that. it will proceed to happen this way until you learn to respect the distance
Yes, there is technique to near success with backstabs, just don't fight the fight invaders want. If learning and it comes to it, use environment to cover your back. You get to choose where the fight occurs. Then invaders cry cry cry like the female dogs they are... (ಥ﹏ಥ)
