so there is no way to create a new main category? like, if i don't want to add the texture or asset to a subfolder within the Fantasy Fortress main folder.

You may create it manually in the file system.
1) Open DPS working folder/data/collections, and create the folder with the name you like.
2) Create three folders "floors", "objects" and "walls" inside
3) Restart the app
Now you may add subfolders using the plus button

Might I ask if there is a way to delete a mod somehow? I unsubscribed from the mods I do not need any longer, however, cannot find a way to delete them from the DPS.

Software isn't downloading from steam, I keep getting an error saying "Content Servers unavailable" and that an update is required but no clues as to what up date that is. I'm looking for help if you have if.

No, different versions operate different entities.
