Hod do you toggle all ui?
I found the hud toggle is Cntrl G but in most screens it seems like people have all of their ui elements turned off, like production status notifiers, arrows over ships, ect.
Any key combo to turn all ui elements off like you see in many screenshots?

CNTRL+G (default setting) toggles the UI on/off and leaves the view the same. This is probably how most screenshots are done. You can still interact with the game, unlike F1 that changes the view somewhat.
