Halo 1 multiplayer is the original by default and halo 2 has both anniversary and original multiplayer modes.
Halo 1 and 2 campaigns are just the original game with new graphics ontop and halo 2 anniversary multiplayer is a new version based off halo 4
All the others are the originals.
But MCC has Halo 1, 2, 3, ODST, Reach and 4. 4 isn't worth your time at all. The other games all depend on your personal taste.
♥♥♥♥ off with that nonsense, 4 is flawed but still good.
Art design changes change the atmosphere dramatically and new model geometry does not line up with hit boxes in Halo CEA.

I'm definitely not gonna waste time on anything by Microsoft or 343 or for that matter.
EDIT:
Minor spoilers to Halo CE in the second half of this trailer, if you know nothing of the Flood. Try to play them mostly blind, if you haven't played the series.

His Combat Evolved Rebalance is on the Steam Workshop, and he's currently working on Halo 2.
