What are the other 43 countries that Steam is avaiable in?
There are 194 countries in the world but Valve says that Steam is avaible in 237 countries.

there are territories that are considered countries by valve that arent recognized by the world as being their own separate country like Taiwan.

ok where did you get this information because all i found was 194 - 196 and in 2012 there were 193 countries and 12 territories
The existence of some countries is under dispute so that's probably it, as cSg|mc-Hotsauce mentions. Furthermore, there are some entities that just have historically had different governance even though the country they belong to is not currently in dispute, but this causes them to be listed separately in many instances.

Let me see how many I can name off the top of my head.

Countries whose existence is under dispute
* Taiwan
* Palestine
* Western Sahara
* Abkazia
* Transnistria
* whatever crap is going on in eastern Ukraine

Historically distinct governance:
* Hong Kong
* Macau
* Puerto Rico
* American Samoa
* US Virgin Islands
* Marshall Islands
* Guam
* French Guiana
* British Virgin Islands
* French Polynesia
* there's just a bunch of other Caribbean overseas possessions
* overseas possessions in general (though no one lives on Bouvet Island as far as I know)
* different divisions of the core United Kingdom -- Northern Ireland, Scotland, Wales, England

Steam also probably counts Antarctica as a thing? I've seen someone use that as a country label.

That's what I've been taught back when I was studying economy, and I rounded the number since it has surely changed since then.

those are only the ones recognized by the nations of the world (the UN).

there are many others who say they are their own but are not recognized by the UN as their own separate country.

Go into your profile settings and try setting your country. There are 250 countries in total listed there. You'll see that some overseas territories like the Virgin Islands or the French Guiana are marked as separate countries.
Also as mentioned, any business would likely treat each disputed territory as "separate" to stay on the safe side as well as set different price tiers.

Oh I should have known the last two.

Kashmir is part of the India/Pakistan dispute right?

And I've never heard of Karabagh.
Edit: Oh it's probably Nagorno-Karabakh in Wikipedia.

And Karabagh was part of the armenian territory back in the days.
