I can't wait for Fallout 4, but wish that I had been able to get the Pipboy edition (I have the CE for Fallout 3 and NV).
I've also got all the Fallouts (including Tactics) for PC (never played Brotherhood of Steel...from the sounds of it, that is a good thing!). I enjoy them all.
I remember the first time I left the Vault in F3. Just looking at how far I could see, I truly felt like I was there and that there was a whole world to explore! I literally got goosebumps at that time. Amazing game!

The reason for this comment is that there is a modder out there (not me) that has created quest-type mods for both on NexusMods (they have mods for the Fallout and Elder Scroll games, all free), whose name is Puce Moose. If you still play Fallout: New Vegas I would suggest trying out his mod called 'Tales From The Burning Sands'. He has a bunch for F3 as well if you are interested.
I have also heard that Bethesda liked his work so much they used his services for Fallout 4! I can see that being true as his mods have DLC quality to them!
Sorry for the long comment. I hope you check out the mods and enjoy them (even if it's as a warmup for Fallout 4!).
