As a former server that worked there, hardly anything is made fresh in house. The breadsticks come in boxes. The freezer and walk in are filled with boxes of already made, frozen and non frozen items. They just basically take the frozen food, put them on speed racks to defrost, and then throw it on the flat top or skillet, or in the fryer or melt to warm it up and mix with premade pasta and warmed up sauce. Some items just get cooked/warmed up in the microwave. The only thing i saw semi made in house was the soups. But they would just make huge amounts of it and then put it in portion bags to be warmed up during the shift as needed. The lasagna was premade (frozen) and cut into slices that they would just sprinkle more parm cheese on and put more meat sauce around it and then put it into the melt to melt the cheese and warm it up.
