The Dice Room with a single (1) Dot will re-roll all your items into others.
Please note; spacebar items can be changed into passive items, but passive items cannot turn into spacebar items. Be very careful in challenges where your character is blindfolded. You could end up completely unable to harm anything.

The Dice Room with two (2) Dots will re-roll all the collectibles, such as coins, hearts, bombs, etc., in the room, much like the D20.

The Dice Room with three (3) Dots will re-roll all collectibles on the floor. ALL of them.

The Dice Room with four (4) Dots will re-roll almost all the items on the floor, much like the D6. The items that aren't affected by this are items in the Shop and Angel/Devil rooms.

The Dice Room with five (5) Dots gives you a Forget Me Now affect by Re-rolling and Restarting the floor. It'd be better if you waited until the end of the floor for this one!

The Dice Room with six (6) Dots re-rolls all your items, much like Dice Room #1, and re-rolls all the collectibles on the floor, just as Dice Room #3 does.

Q: If I re-roll my items and I get an item that I haven't picked up before, will it still count as me getting it and will it be put in my collection?
A: It seems that it does count for your collection, as one commenter said " I recently re-rolled my items and got money = power and after the run (I hadn't even seen the item before getting it there) It was there on the second page :)"
