  Staff Spotlight💡 Francisco Cespedes, Senior Sous Chef   Francisco joined the Amazonico Jungle in 2019 for the opening in London. Today, he shares his experiences that have led him to where he is now: •What made you choose a career in the hospitality industry ❓ I started as a Kitchen Assistant, and I fell in love with food. I have mostly worked in South American concepts and cuisines, myself being from South America and familiar with the ingredients, over the years I have elevated my skills through a combination of my heritage with London’s high standards.     •Tell us about your role and your experience working for Amazonico? 🌴 I joined Amazonico when it opened in 2019 as a Seniors Chef de Partie and I was excited to contribute to its success to this day. It’s been an amazing journey; building a team with a great work ethic, working closely with the Corporate Chef Vitelio Reyes has taught me how to fall more in love with the top quality ingredients that we use in our restaurant source straight from Brazil, Mexico, Venezuela and other countries of the region.    •What advice would you give to anyone considering applying for Amazonico? ✨ Our team is made up of those from all over the world and this makes our restaurant a big success as we all learn from each other. Today, he shares his experiences that have led him to where he is now: • What made you choose a career in the hospitality industry❓ I chose this industry out of my passion for music, creativity, and its dynamic nature. Every day presents a different challenge that fills us with experience, and teaches us both on a personal and professional level.   • Tell us about your role and your experience working for Amazonico?🎶🎵🎧 My first challenge as Group Music Director was to create and conceptualize what would become the identity of Amazonico. I wanted to bring together, through music, the flavours, scents, colours, and diverse cultures of the Amazon. Amazonico allowed me to develop a vision, a musical style unique to the concept, which today represents the festive, warm, and colourful values of our establishments. Between the South American orchestras performing a unique repertoire in the restaurant every evening and our resident DJs igniting the Lounge with the help of our percussionists, we can now say that Amazonico has its own sound and style that we call 'Elec-Tropicale’.   • How would you describe the culture of Amazonico?🐆🦋 Amazonico is a large family growing overseas. We are taught to become a better version of ourselves by prioritizing people, sharing knowledge, and effective communication. Personally having Spanish origins, I grew up with those values and I am thrilled to find the essence of the Latin culture at Amazonico.   • What advice would you give to anyone considering applying for Amazonico?✨✨ Amazonico is the perfect establishment to learn, develop talent, and climb the ladder.
