Meet Arnaud Galabru, a journey of growth across borders with COYA Arnaud’s impressive five-year journey with #COYA exemplifies dedication, adaptability, and a passion for excellence. Beginning in 2019 with the launch of COYA #Paris, he quickly proved himself an invaluable team member, taking on the responsibility of supervising training and setting the stage for a successful opening. Since then, Arnaud’s commitment to his craft has led him across countries and through multiple roles within COYA’s global family. Starting as a supervisor, he advanced to assistant restaurant manager, and then to restaurant manager. In 2023, he embraced the challenge of supporting our teams in COYA #Dubai and #AbuDhabi, further enhancing his skills and experience. Returning to COYA Paris in December 2023, Arnaud stepped into a new role as Assistant General Manager by March 2024, bringing a wealth of international experience and leadership skills. This summer, we proudly celebrated his 5-year anniversary—a journey that reflects his resilience, growth, and the exciting possibilities within COYA. Arnaud's story highlights the potential for development and the opportunity to thrive in different markets. Proudly Pinning for Pink October: COYA is committed to raising awareness and supporting the fight against breast cancer. This month, COYA Dubai and COYA Abu Dhabi have partnered with the Al Jalila Foundation Foundation, donating 5% of proceeds from our degustation menu to support breast cancer patients. Meanwhile, COYA Paris has teamed up with Maison RoseUp, offering special pink-themed dishes—Ceviche, Cauliflower, and Suspiro dessert—and cocktails like Nuevo Rosa, Pisco Rose, and Rosa de Lima. Highlighting Morgan Miel-Girard's journey with #COYA, from Head Sommelier at COYA Mayfair to Head Sommelier #UK & Paris Morgan’s passion for #hospitality began in Nice, France, where he started working in seasonal jobs at 16. His love for wine led him to specialize as a #sommelier, working across the French Riviera before moving to London in 2010. After roles at Le Boudin Blanc London and Innocent Bystander Winery in Australia, Morgan joined COYA in 2021 as Head Sommelier. Today, he oversees the wine programs for our venues in #Mayfair, #City, and #Paris. His vision is to help open new COYA restaurants, crafting wine lists and managing suppliers. For Morgan, COYA’s dynamic energy and excellent wine selection make it the perfect environment for growth. Reflecting on his journey, Morgan cherishes the small pleasures—working with his team, building relationships with regular guests, and enjoying the freedom to make decisions. His advice? Keep an open mind and embrace the COYA energy.  Morgan's journey with COYA is one of passion and growth—a perfect reflection of the COYA spirit and commitment to employees development.
