Fhior, an adaptation of the word for ‘true’ in Gaelic, was founded in June 2018 by Scott and Laura Smith, with the vision to create a dining experience wholly reflective of the word: true to Scottish produce and producers, true to an ingredient's flavour and seasonality, and true to their own artistic expression. Fhior comes highly regarded in the industry – the restaurant is Michelin recommended, a Trip Advisor Traveller’s Choice, and has been favourably reviewed in the New York Times and Condé Nast Traveller. Beyond the restaurant, the Fhior experience also encompasses specialist food and drinks events and private dining service ‘Fhior at Home’. In 2020, the company expanded twofold. First, with the acquisition of the Secret Herb Garden in Edinburgh and management of the café and events there. At this site, the Fhior Garden was also installed – a completely natural farm space to grow local and heritage variety produce exclusively for the restaurant and café. A further expansion of the company’s portfolio came initially as a reaction to the Covid-19 crisis. Online produce store, Root to Market, opened as an initiative to connect local, independent producers to consumers, and this service is now growing and adapting to create an online marketplace for exceptionally high quality fresh produce, pantry goods and restaurant quality wines and home meals.
