The “Taste Factory” facility can produce up to 60 tonnes of product each month. Its first release is an updated whole-cut mycelium-based salmon fillet, made with their 3D Structuring technology that combines fat and protein to mimic the texture of real meat. Revo’s new product, The Filet – Inspired By Salmon, will soon be available in over 500 REWE stores in Austria. The new line will produce specialty cocoa powders and liquors with unique sensory profiles tailored to local preferences, driven by a trend toward multi-sensorial, healthy indulgence, and conscious consumption, as highlighted by Cargill’s 2024 TrendTracker® study.
