A Chartered Civil Engineer by profession, Paul perfected his distilling skills with world-class industry leaders at Heriot-Watt University in Edinburgh. THE SPIRIT OF COLLABORATION 🥃 💫 The distilling community is truly remarkable for its collaborative nature and industry camaraderie. Over the years, we’ve had the privilege of sourcing and exchanging casks from numerous distilleries across Scotland, spanning from the Highlands to the Lowlands. Our journey has even taken us across the Atlantic, where we’ve partnered with LYON RUM // Windon Distilling Company in Saint Michaels, Maryland. We’re delighted to have taken delivery of 17 of Windon Distilling’s first-fill ex-bourbon barrels at our distillery, originally sourced from Kings County Distillery, which previously held their New American Rum. Collaborations like these are incredibly valuable, as they allow for the exchange of ideas and innovation, resulting in unique combinations of flavours that push the boundaries of what’s possible in maturation. We can’t wait to incorporate these beauties into our cask programme! Side note: Both our Head Distiller Paul and Brett (Head Distiller at Windon Distilling) undertook Heriot-Watt University's Brewing & Distilling programme.
