Last week, Ben Branson launched pre-orders for his latest creation: Sylva, a dark spirit with less than 0.5% ABV. I've followed Ben’s trailblazing journey for over five years. Back when I first opened Spirited Away, Seedlip was one of the few non-alc brands on our shelves. I later had the chance to meet Ben when he brought a rare 1651 edition of The Art of Distillation to New York City—a moment in my non-alc journey I won't forget! Sylva, the latest project from Seedlip’s Ben Branson, focuses on reimagining the possibilities for non-alcoholic dark spirits. Its first product, PADAUK, just launched for pre-order in the UK. Sylva differentiates itself from other non-alcoholic spirits by using an innovative maturation process involving ultrasonic waves, which Ben refers to as "sonic maturation." This technique harnesses powerful ultrasonic waves to break down wood, efficiently extracting its flavor, color, and character. Ben describes the process as a way to tap into the vast diversity of wood species, unlocking flavors such as chocolate cake, smoked plum, and leather—without the limitations of traditional barrel aging. Unlike many non-alcoholic spirits, Sylva does not rely on dealcoholization or flavor add-backs, focusing instead on using raw wood. Their novel maturation method allows for greater experimentation, resulting in a product that explores the untapped potential of wood-based spirits. Designed for sipping and mixing, it’s described as "hard and expensive to make" due to the meticulous production process. With Sylva, Ben aims to challenge traditional methods and redefine how non-alcoholic spirits are crafted, offering an entirely new approach for consumers seeking complex, dark flavors without alcohol. Sylva’s launch marks a significant moment in the non-alcoholic spirits category, particularly as it remains focused on innovation rather than imitation. Ben’s commitment to creating something entirely new is reflected in every step of the process, from sonic maturation to branding that avoids overtly marketing the product as non-alcoholic.
