At Unity Place MK, our talented patisserie team operates the Baker’s Room - a welcoming bakery where both the public and our guests can indulge in a daily selection of sweet treats and freshly baked sourdough. Last Friday the team there ran a skills-based afternoon where patisserie chefs from across Restaurant Associates UK were invited to join in with a hands-on pastry session. The agenda featured an array of classic treats, including croissants, pain au chocolat, and other pastries, alongside fresh sourdough. It was a unique opportunity for our pastry chefs to dive deep into the intricate techniques and production processes that make these pastries so special. Thank you to Nick Male for organising such a valuable and engaging event - these hands-on sessions are fantastic for honing skills, sharing knowledge, and sparking new ideas that everyone can take back to their kitchens. #trainingtogether #collaboration #treats

We are thrilled to celebrate the remarkable achievements of our talented chefs, Alex Milligan and Jess Miller, who showcased their culinary excellence in this year’s Compass Chef of the Year competition. Alex Milligan, Senior Sous Chef at Restaurant Associates, was crowned Senior Chef of the Year, while Jess Miller took home the bronze in the Young Chef of the Year category. Many congratulations to all of the finalists who showcased their fabulous dishes and exceptional culinary skills. Held for the first time at Xcelerate with Edgbaston, this prestigious event brought together some of the most skilled chefs within Compass Group, celebrating culinary talent, creativity, and commitment to sustainable practices. Alex impressed the judges with his expertly crafted three-course menu: a starter of glazed carrot with autumn herbs and silken tofu, a main of pan-fried South Coast Sea Bass paired with cauliflower and pink grapefruit, and a decadent sticky toffee pudding dessert with Kent pears and clotted cream ice cream. The competition also featured outstanding young chefs who demonstrated ingenuity and technical skill. Our very own Jess Miller’s dedication to the craft was recognised with a commendable third place in the Young Chef category. Alex shared his excitement: “It’s an incredible honour to be named Senior Chef of the Year. Competing alongside such talented chefs was inspiring, and I’m grateful for the chance to showcase my passion.” We could not be prouder of Alex, Jess, and all our talented chefs who elevate our dining experiences every day. Visiting our suppliers is always a valuable experience, and this month our Culinary Director, Adam Thomason, had the opportunity to travel overseas to visit our rice supplier Riso Gallo UK. They are currently on an exciting journey, growing their rice through sustainable agriculture, which offers a great opportunity to showcase to their customers how they’re doing things right — both for the brand and for the planet. The whistle-stop tour included a visit around the factory, a demonstration of how the rice is harvested and milled, and more insights into their sustainable practices. It was a wonderful celebration of our team’s hard work and dedication, creating an unforgettable atmosphere in the room, Imperial War Museums.
