🌏 Le 212 au Vietnam - Épisode 1 🇻🇳 À peine arrivés au Vietnam, les étudiants du master 212 sont partis à la découverte des entreprises locales, en commençant par la capitale économique Hô Chi Minh-Ville, au sud du pays. Lors de notre séjour à Hô Chi Minh-Ville, nos étudiants ont été chaleureusement accueillis par Vincent Gérard Mourou au sein du flagship de Marou - Faiseurs de Chocolat. Marou est né en 2011 de la collaboration de Vincent Mourou, publicitaire de formation et longtemps expatrié aux Etats-Unis, et Samuel Maruta, initialement cadre en finance internationale, tous deux devenus les pionniers du chocolat vietnamien. Alors que la quasi-totalité de la petite production vietnamienne de cacao, à peine 5 000 tonnes les meilleures années, était auparavant exportée et n’était aucunement mise en valeur, Vincent Mourou et Samuel Maruta ont été inspirés par le potentiel inexploité du cacao vietnamien. Conscients du potentiel du Vietnam en tant que producteur de cacao de haute qualité, Samuel et Vincent ont traversé le pays à la recherche des meilleures fèves de cacao. Ils ont établi des partenariats avec des agriculteurs locaux dans des provinces telles que Ba Ria-Vung Tau et Ben Tre, où le cacao est cultivé de façon traditionnelle, et ils y ont établi des partenariats de long terme basés sur des pratiques agricoles durables et équitables ainsi que sur la confiance mutuelle. Chaque étape de la production est ainsi réalisée de façon artisanale, de la sélection des fèves à la fabrication du chocolat, qui se fait uniquement à partir d’ingrédients vietnamiens dans leur fabrique à Hô Chi Minh-Ville. L'histoire de Marou illustre parfaitement le potentiel du Vietnam en tant que producteur de cacao de qualité supérieure et son émergence sur la scène mondiale du chocolat artisanal. En combinant savoir-faire traditionnel, innovation et passion, Marou a réussi à mettre en valeur le patrimoine chocolatier unique du Vietnam et à contribuer à son rayonnement sur la scène gastronomique internationale.
