First off - was this a goal? Many fighting games encourage competition, shouting and aggression whereas a cozy sim may not. Is the tension positive or negative? 2nd, identify the source of the emotions. Is the problem the game, the loop, a problem, another player? 3rd, talk to players. Is this a spitfire frustration they'll forget about in a moment or a game breaking bug that ruined their experience? Finally, what would the tester suggest? Even if they're wrong, this helpfully displays their thought process and opinions. Record as much as you can, preferably in their own words. See if other testers react similarly or not, and whether your involvement (or lack thereof) had any impact on the situation.

The best way I see to navigate the emotions is to just quickly scan everything. Even in the most heated discussions you may find valuable information. You don't want to waste all your time but a quick scan should take just minutes to soars the two types of information.
