In the beginning research who needs access to your environment and start documenting their IP addresses for rule creations later.

Sales people will promise you a device can handle things, but you can bring sample data and verify that this hardware can handle the load. Also be sure that you choose whats best cost efficient for each data center you need to install a firewall. If cost is an issue, have the engineers that do the work request demos from the company. You can add a tap to your existing device and simulate data going through the box to test durability.
