But, What About Avocados? We Have an Alternative An article in this month’s Architectural Digest inspired us to take up the topic of avocados from our perspective. The article highlights Fernando Laposse’s new installation, Conflict Avocados, at the National Gallery of Victoria in Melbourne, Australia. Images of destruction are stitched together into a 137-foot-long tapestry. Laposse explains, “Avocados are often seen as the healthy and ethical thing… but if you look at everything that has to be destroyed for an avocado to get to you, it’s crazy… particularly the violence to agricultural regions some of it at the hands of cartels that have embraced the business as a means to make and launder money, water cultivation and social issues stemming from labor conditions and land use conflicts.” We’ve never had avocados on our menu at Chaia. Not because we don’t like them but because they seemed ubiquitous, topping toasts, salads, and bowls on every menu. So, when it came to guacamole and avocados, we decided instead to get creative in the kitchen and explore delicious alternatives that satisfy this craving and align with our seasonal and sustainable values. The result is our Chips with Habanero Pepita Dip made with pepitas instead of avocados - a deliciously creamy alternative - especially when paired with a Chaia Margarita! FACTS: Similar to meat, we do not suggest you never eat avocados. We merely suggest balancing eating avocados with other alternatives to reduce the impact and demand and eat more consciously. According to the Washington Post, an estimated 15,000 to 20,000 acres of forest are destroyed each year for avocado farms resulting in the loss of biodiversity and soil. ...And, an estimated 60 to 70 gallons of water go into the production of one avocado.

REDEFINING A CATEGORY We recentlysent out a survey to glean our customers thoughts on what they like about Chaia, how we can make their experience better, and what they want to see more of - and they answered. The main thing - they said - that sets Chaia apart from other fast casuals is that we serve high-quality, fresh, flavorful, healthy food. "I feel good after eating there. I love the number of veggies included in each option!" To us, the word wellness promotes the idea of taking care of yourself. Focusing on how you honor yourself is a big part of staying well. While we know that plant-based eating holds numerous benefits for our physical well-being, studies have shown some great results when it comes to adding plant-based foods (think vegetables, beans, and more!) to your diet for boosting mental health as well. Plant-based foods help support a better sense of balance, both physically and mentally. One way to honor yourself in 2024 is to try Chaia's new Seasonal Sampler. It includes all five of the vegetable tacos currently on our menu. It's a great way to begin the new year!
