The Salida School District is leading by example in incorporating Colorado-grown and raised products into their school menu year-round. For Colorado Proud School Meal Day earlier this month, students enjoyed Taco Tuesday with ground beef tacos made from local beef sourced from Blue Range Ranch in Saguache, CO. The tacos were accompanied by fresh, local carrots and apples. That same week, the district received 1,000 pounds of broccoli from Headwater Farm in Buena Vista, CO, which they cut, steamed, and flash-froze to ensure students can enjoy the produce during the winter months. Additionally, the Salida School District collaborates closely with Guidestone Colorado, which runs the Community and School Farm, providing fresh produce to the schools and the community every week. The Englewood School District marked Colorado Proud School Meal Day with an impressive menu! They served a delicious tamale lunch featuring Green Chili and Refried Beans from Ticos, a local food company, along with a corn and black bean salsa made from local produce and tortilla chips. Chef Jess’s Cheesy Calabacitas recipe, made with local ingredients, was also a highlight! The event saw great participation from the district's administrative staff at Bishop Elementary, and it turned out to be one of the most popular lunches among students this year. Englewood School District has actively participated in the Local Food Program for all four years, collaborating with various local businesses and building a strong partnership with Valley Roots Food Hub. Their commitment to incorporating local food into their meals ensures students enjoy tasty and nutritious options.
