All Decaf is Not Created Equal Chemical Decaf?? 😳🤢 Around 1,000 chemical components contribute to a coffee bean's makeup. These provide its taste, aroma, etc. It's challenging to remove the caffeine without removing these components. This is why historically decaffeinated coffee doesn't taste "good". There are two major ways to decaffeinate coffee. - Solvent Based Methods - Non-Solvent Methods Let’s talk about these! • Solvent Process - Chemical Contact • The Direct Solvent process steams green coffee to heat and open its pores. The coffee is then rinsed with a chemical solution. The methylene chloride in the solution binds to the caffeine. This leaves you with decaffeinated green coffee and a coffee-flavored solution. Next, the coffee is removed from the solution and the caffeine/chemicals are skimmed out of the solution. The green coffee is placed back in the solution to re-absorb the flavor... (hopefully 😉) And if the coffee started organic it's now been in contact with chemicals. • Non-Solvent - Mountain Water Process • This process is similar to the solvent process. But instead of using chemicals to remove the caffeine it uses high-grade filters to capture the caffeine. Once the caffeine is removed the green coffee goes through a triple drying system. The process removes 99.94% of the caffeine content. And no chemicals are used. So the grade one specialty coffee you buy from us is organic...and stays organic :) Remember decaffeinated doesn’t mean “Caffeine-free.” Trace amounts will remain regardless of the process. Keep these things in mind next time you go to buy decaf coffee.

1 out of 451. What makes coffee high quality? Here is one factor that goes into it. Green coffee is graded by assessing the number of defects per 300 grams. (warning...math is ahead) The average coffee bean weighs .1325 grams. So in every 300 grams, you have about 2,264 individual beans. 😳 The grade one specialty coffee you get from us has less than 5 full defects in every 300 grams. OR... Less than 1 defect for every 451 beans. Compared to the exchange grade which allows up to 1 defect in every 98 beans. Various things in the coffee can make a defect. - Husks - Pebbles - Chipped beans - Sticks and twigs - Beans that won't roast! Ideally, your roaster will pick out any of these defects that make it through.
