After tasting each other’s coffees and discussing our approach, we decided that exchanging green (unroasted) coffee would be the best way to offer something fresh and unique to our customers. 👉 Counter Culture’s Pick We chose a naturally processed coffee from Fritz’s partner, Herbazú, in Costa Rica. Founded by José Antonio Barrantes Zuñiga (Toño) and his siblings, Herbazú led Costa Rica's micro-mill revolution, selling directly to exporters and roasters. The family continues to innovate with advanced processing techniques and new coffee varieties, earning the Bandera Azul award for environmental practices. Herbazú has had a profound impact on coffee growing and processing in Costa Rica and the family is highly respected. 👉 Fritz’s Pick Fritz selected Gesha micro-lots from our partner, Incahuasi, in Peru. Nestled deep within the Incahuasi Valley, seven hours from the cooperative’s warehouse in Andahuaylas, Lucio Luque and Eudis Orosco exclusively cultivate Gesha variety coffee. Finding Gesha on remote farms worldwide is not surprising, but preserving its exquisite flavor to reach cups halfway across the globe is a small miracle. This unique hybrid is synonymous with cup quality in the country. This coffee was honey-processed, meaning after the cherry’s skin was removed, the seeds were dried with their sweet, sticky mucilage still intact. This processing method plays up the fruit tones of this variety, resulting in a cup that is rooted in brown sugar sweetness, with layers of juicy, tropical fruit as it cools.

For 20 years, CCC has made coffee dreams come true through the Origin Field Lab (OFL). OFL is a week-long immersive course where students engage in both practical field work and classroom instruction on-site in places where coffee grows. In years past we have visited CCC producer-partners in Honduras and Nicaragua. We will be going to Peru for the first time since OFL's inception. CCC instructors will take a group of selected participants to visit our producer-partners at Origin Coffee Lab and CENFROCAFE in October later this year. So much so that the variety is often referred to as ‘Javanica’ in the region. Mario and Nelly Lovo, owners of Finca La Victoria, strive for continuous improvement, and testing new varieties is central to exploring the range of coffee flavors capable of being produced on their farm. When we learned that Java was among the most recently planted varieties, we were very eager to taste the results.
