Extracts offer powerful ways to improve brewing efficiency. They also allow brewers to enhance and even supercharge bittering, flavor, and aroma characteristics to their beers. Let’s explore the science behind Hop Extracts so that you can understand how best to use them in your brewing process. Key Takeaways: -What CO2 Extraction Actually Does -Understand Different Extracts for Bittering vs Flavor vs Aroma -How Extracts Improve Brewing and Brewery Efficiency Chris Holden grew up on his family’s farm in Steuben County in the Southern Tier of New York. The farm was a tobacco farm in the 1800s, where his great-great-grandfather grew a small number of hops for the neighboring town of Woodhull, the marketplace for all crops in the area at the time. In 2013, Crooked Creek Hops was established on this historic family farm, starting with just an acre and quickly expanding by another 4.5 acres two years later, with further growth about every two years. While working full-time jobs, the team marketed their hops during their days off, continually seeking new markets. In 2015, Cornell Cooperative Extension began referring other growers to Crooked Creek Hops for guidance on marketing hops to Farm Breweries and other breweries around the state and beyond. To supplement their own production, they also began purchasing hops from trusted farms in Michigan and Washington. In 2017, Chris joined the board of the Northeast Hop Alliance, which led to the formation of the Hop Growers of New York, a state growers association that helped initiate a public hop breeding program at Cornell. In 2018, Chris co-founded the New York Hop Guild with Chuck Rhoades to support New York farms in selling high-quality hops locally and beyond. The guild quickly expanded to include a network of growers from Michigan, Washington, and Idaho, and later to international markets in New Zealand, Germany, and Slovenia. In today's dynamic craft beer industry, diversifying revenue streams is more important than ever. As the Director of Business Development for promotional product company, Shore Up Supply, Emily Neville has seen firsthand how the right merch presented and marketed in the right way can be a consistent profit stream for breweries who choose to invest in it. Still, with thousands of items to choose from and exponentially more color and design decisions, it may seem daunting to broach the topic at all. Throw in online inventory management and taproom displays, and is it even worth it? In this session, you'll be handed a strategy for supplier management, ordering timelines, taproom merchandising, and marketing tactics to turn your hoodies and hats into a profit stream. We'll discuss the latest trend and set you up for success to give your patrons mech they can't walk away from! Emily Neville is a graduate of the 4-year merit-based Park Scholarship at NC State University. While in school, Emily started Beer to Bags to transform the thousands of spent malt bags entering landfills into profitable brewery merch. Emily grew the brand to resell in over 200 taprooms, converting 10k+ malt bags since its infancy. Beer to Bags was recently acquired by Hoptown Handles and its sustainable merch arm, Shore Up Supply, in April 2024. Emily is remaining with the brand in a new role as Shore Up’s Director of Business Development. Emily lives with her husband Tyler and dog Oliver in Raleigh, NC. Join a conversation about what Smart Buying is, why it's important, and how you can start implementing it at your brewery this month. It's not something that happens overnight, but we walk through a few real-world examples of changes breweries have made to start Smart Buying and how it saved them money. We'll also focus on a few ways you can start to implement your program and train your staff to do the same. Questions are welcome about things you might be facing when it comes to brewery buying. My name is Dan Klasen and I’m the Founder and President of the Beverage Federation. The Beverage Federation is a Group Purchasing Organization that provides buying services to its craft members. We have a growing membership base of craft brewers looking to find easier ways to operate their brewery without sacrificing quality. Starting the Federation in 2022 has combined my passion for meeting new small business owners, negotiation, and cost-saving programs. I enjoy finding scaled-down solutions that can help not just one of our brewery members but can be applied to our network of members. While the process of making beer has remained largely unchanged over the years, the technology surrounding breweries is constantly evolving. Most brewers don’t get into brewing to sit behind a computer and spend countless hours fiddling with spreadsheets. With so many technological options these days, which ones can actually help improve employee performance and decrease their workload? Alex and Harrison explore various methods of deploying technology in breweries, such as digitizing brew logs, using technology to calculate COGS quickly, deciphering data to expand distribution efforts, and more! Our goal is to help you choose and implement the best technology for your brewery to give you more time back to make great beer! Managing people in a brewery presents unique challenges, from handling unruly guests to ensuring employee safety in different work centers. I will provide a practical and strategic conversation on HR in breweries, exploring the evolution of HR from a paper-pushing department to a crucial component of business strategy, employee experience, and retention. Whether you have an HR person or not, you will leave with a better understanding of how HR shows up in your role and your business. This is a “why does it matter” and “why does this help me” type of conversation—not a lecture. You’ll learn how to create, document, and publish a code of conduct that aligns with your brewery’s vibe and legal obligations. We’ll discuss how to identify various types of harassment and establish procedures for receiving and investigating complaints, even when the harasser isn’t an employee. We’ll talk about real-world scenarios, such as a taproom employee dealing with an unruly guest or a salesperson handling inappropriate behavior during a tap takeover. Additionally, I’ll share nonnegotiable steps to protect your business and employees, leveraging HR resources efficiently without making it a fluffy “HR” conversation. This chat will equip brewery owners and managers with actionable insights to elevate their practices and create a more efficient employee experience. Join me to transform your brewery’s HR from a check-the-box admin activity to a strategic advantage, with practical insights and real-world examples to enhance your employee experience and business success. Jessica Hart is an experienced HR leader with a knack for simplifying complex issues.
