Typically, when preparing winter squash, the seeds are scooped out and unnecessarily discarded, but here is a delicious suggestion that embraces our food waste initiative. The Delicata squash is one of the autumnal favorites for eating and for décor. It is a smaller squash and one of the more delicate of the hard squashes. The Delicata is unique in that the skin is very thin and may not be worth the effort to peel. You can slice these in half-inch rings and take the seeds out, brush them with a little olive oil, and grill or bake. The skin will crisp up deliciously. You can also take them, split them in half, roast them flesh side down, and then stuff them with your favorite protein- or grain-based option as a center-of-the-plate entree.
